| Zeigler Yucatan Quiche |
| Crust: 3/4 -1 c.

7 - 8 Corn Tortillas Filling: 1/2 lb. Zeigler Finest Pork Sausage, browned and drained 2 Eggs, beaten 3/4 c. Half and Half 1/2 tsp. Salt 2 c. Monterey Jack Cheese, shredded 1 c. Refried Beans 1 T. Taco Seasoning 2 T. Green Chilies 3/4 c. Chunky Salsa, mild |

In medium skillet heat oil. Dip each tortilla briefly to soften . Press between paper towels. Spray 9" pie plate with non-stick vegetable spray, then line with the prepared tortillas, overlapping them. Extending about 1/2" over pie plate edge. In a small bowl, combine eggs, half and half and salt; set aside. Mix taco seasoning into beans. Then sprinkle half the cheese over the tortillas followed by the beans, sausage, chilies and egg mixture. Spread salsa over the pie, topping with the remaining cheese. Bake in a 350 degree oven for 30 minutes or until firm. Cool for 15 - 20 minutes before cutting.
