Sausage Stuffed Squash
1/2 lb. Zeigler Finest Pork Sausage

6 Large Yellow Squash

3/4 c. Seasoned Bread Crumbs

2 T. Onion, finely chopped

1 Egg, beaten

Salt and Pepper to taste

Parmesan Cheese

 

Wash whole squash and cover with cold water in a large sauce pan. Cook for 6 - 8 minutes on high. Allow squash to cool enough to handle. Cook sausage in skillet, stirring with fork until almost done; drain. Slice squash lengthwise in half leaving ends on. Carefully scoop out inside of squash with spoon, leaving about 1/4" shell. Combine sausage, squash pulp, bread crumbs and beaten egg until well mixed. Add salt and pepper. Carefully fill each shell with mixture. Sprinkle top with bread crumbs and parmesan cheese. Place squash in a shallow baking dish that has been buttered. Bake for 20 minutes at 325 degrees.
