| Zeigler Sausage & Cheese Muffins |
| 1 lb. Zeigler Hot Finest Pork Sausage, browned and drained
1 tsp. Baking Soda 1/2 tsp. Salt 1/8 tsp. Red Pepper 3/4 c. All-Purpose Flour 1/4 c. Green Bell Pepper, chopped 1/4 c. Green Onions, chopped 3/4 c. Cheddar Cheese, shredded 1 c. Plain Corn Meal 1 Egg, beaten 1 1/2 c. Buttermilk |

Preheat oven to 400 degrees. Combine crumbled sausage, green onions, green peppers in skillet and cook over medium-low heat until sausage is brown. Drain and place in a large mixing bowl. Combine flour, cornmeal, soda, salt, red pepper, and cheese; stir well. Combine egg and buttermilk; stir well. Add buttermilk mixture and flour mixture to sausage mixture. Stir until moistened. Spoon into greased muffin pans, filling 2/3 full. Bake for 25 minutes or until golden brown.
