| Light Quesadilla |

Deli Slices Oven Roasted Turkey, cut into 2" pieces
2 c. Tomatoes, chopped 2 c. Onion, chopped 3 c. Fat-free Mozzarella Cheese, shredded 6 (10") Flour Tortillas 2 c. Broccoli, chopped 2 c. Green Bell Pepper, thinly sliced 1/4 c. Reduced-fat Margarine |
| Heat electric skillet to 350 degrees. Coat skillet with margarine and allow to melt. Place one tortilla in skillet. On one half of tortilla, place 1/4 cup cheese, 2 slices turkey, 1/3 cup tomatoes, 1/3 cup onion, 1/3 cup broccoli, and 1/3 cup bell pepper. Top with 1/4 cup cheese and fold tortilla in half. Flip quesadilla and allow the other side to cook for about 3 minutes. Flip occasionally until cheese is melted. Repeat with remaining ingredients.
