| Peach & Ham Stir-Fry |
| 2 c. Zeigler
Buffet Ham, cubed
1/2 c. Orange Juice 1 T. Cornstarch 2 T. Soy Sauce 1 T. Sugar 1 T. Lemon Juice 1 (16 oz.) can Peach Slices 2 T. Cooking Oil 3/4 c. Peanuts (optional) 1 tsp. Ginger Root, grated 1 Onion, cut into thin wedges 2 pieces Zucchini, thinly sliced Steamed Rice |

Blend orange juice into cornstarch; stir in soy, sugar, and lemon juice; set aside. Drain peaches. Add cooking oil; preheat frying pan over high heat. Stir fry peanuts 2 - 3 minutes or until toasted; remove from pan. Stir- fry ginger root for 30 seconds. Add onion; stir- fry for 2 minutes. Add zucchini; stir- fry for 1 minute. Remove vegetables from frying pan; add more oil if needed. Stir- fry ham in hot oil 2 minutes. Stir orange juice mixture; add to frying pan. Cook and stir until thick and bubbly, then cook an additional 2 minutes. Stir in peaches, peanuts and vegetables; cover and cook 1 - 2 minutes. Serve over steamed rice.
