| Twice-Baked Bacon Potatoes |
| 4 slices Zeigler
Bacon
4 Small Baking Potatoes 1/4 tsp. Dried Basil, crushed 1/8 tsp. Salt 2 oz. Cream Cheese, softened Dash Pepper 3-4 T. Skim Milk 2 T. Chives, snipped Paprika |

Prick potatoes with a fork and bake for 45 - 50 minutes at 400 degrees or until tender. Cool slightly. Cut potatoes in half lengthwise. Gently scoop out each potato, leaving a thin shell. Set shells aside. Put pulp into a small mixing bowl. Add cream cheese, chives, basil, salt and pepper; beat until smooth. Add milk 1 T. at a time, beating potato mixture until fluffy. Fold in crumbled bacon. Pipe or spoon potato mixture into shells. Sprinkle with paprika and place on a baking sheet. Cover loosely with foil. Bake for 10 minutes at 375 degrees. Uncover potatoes and bake 10 more minutes or until heated through.
