| Double Cheese & Bacon Potatoes |

1 (12 oz.) package Zeigler Bacon, cooked and crumbled 8 Baking Potatoes 2 c. Mild Cheddar Cheese, shredded 2 T. Low-fat Margarine 1 c. Milk 3 Green Onions, chopped 1 (8 oz.) Cream Cheese, softened 1 T. Salt 1 tsp. Pepper |

Bake potatoes in 350 degree oven for approximately 1 hour or until they are soft. Brown bacon and crumble; set aside. Cut potatoes in half and scoop pulp out and place in mixing bowl. Add cream cheese and butter. Add salt, pepper, 1 cup cheddar cheese to potato mixture. Add milk gradually. Stir in half of the crumbled bacon and add 2 green onions. Fill each potato skin with mixture and then top with 1 cup cheddar cheese, 1 green onion, and remaining bacon. Place potatoes back into 350 degrees oven and bake for an additional 15 - 20 minutes or until cheese is melted.
